Banana Pudding Bites with Dark Chocolate and Sea Salt

So for a change, I was browsing over Facebook recently. And being the food lover that I am, it’s pretty expected that I land on one of these recipe pages. LOL! Nothing interests me than food of course.

Now this banana pudding bites is a quick snack that’s so easy to make and looks so good. What intrigued me is the added sea salt. We’ve been adding sea salt to almost everything. I wonder if this one takes the cake.

Here’s the recipe:

Source: Recipes of the World

½ cups Creamy Peanut Butter
⅓ cups Honey
⅓ cups Coconut Oil
1 box 3 Ounce Box, Banana Pudding Mix
5-½ cups Rice Krispies (I Used Gluten Free)
1 cup Old Fashioned Oats
1-¼ cup Dark Chocolate Chips
1 teaspoon Sea Salt

Combine peanut butter, honey, and coconut oil in a large saucepan over medium heat until coconut oil is melted. Stir in the pudding mix and whisk until well incorporated. Turn off the burner and remove pan from heat. Add the cereal and oats and stir until mixture is coated evenly.

Shape mixture into bite-sized balls. You will need to squeeze the mixture tightly for the shape to hold. Set the balls aside on a sheet of wax paper.

Microwave chocolate chips in a small glass bowl for about 45 seconds at 50% power, continuing with additional 45 second bursts until chocolate is melted. Stir in between cooking times as needed.

Dip each ball into the melted chocolate, set on the wax paper and sprinkle with sea salt. Keep balls in an airtight container in the fridge.
